Day 18: Butternut Squash
Butternut Squash is a classic fall produce item. We actually grew it in our garden this year, but it was somewhat overcrowded by other items, and worms got into most of it. We did enjoy some roasted butternut squash, though. Wondering what it looks like?

You’ve probably seen it at the grocery store or Farmer’s Market, and at this time of year the prices are the best. If you’ve never cooked with this squash variety, I’d encourage you to choose one of the recipes I’ve collected for you. Enjoy!

I will admit – I fed Miriam butternut squash a lot – still do, actually … But haven’t every really had it myself! ;o) But just the other day, I was thinking we SHOULD eat it,too!!

The twice baked squash looks really pretty! I don’t think I’ve ever actually done anything with butternut squash but maybe if it’s hidden in mac & cheese I could give it a try 🙂
