• Day 6: Applesauce

31 Days of Fall from the Kitchen would not be complete without a recipe for applesauce.  Applesauce has always been one of my favorite sides, ever since I was a kid.  There were certain meals my mom made that I knew applesauce would be served.  I tend to follow suit for my own family.  Last year I attempted making applesauce for the first time and I was surprised at how extremely simple it was!  The only trouble is that now that I’ve made it from scratch, the family really only wants to eat it that way. Whenever I make applesauce, I make just enough to eat for about a week…

  • Day 5: Southwestern Casserole & You Can’t Please them All

Strange title for a blog post, you say?  Maybe, but I try to be honest here and, well, it’s true, you can’t.  Any time you cook something you’re taking a gamble that your crowd will like it.  This is what happened with our dinner last night when I made this casserole.  I loved it.  My husband said there was absolutely nothing about it that he liked.  I encouraged our children to be grateful that we had food to eat and so they shouldn’t complain.  While attempting to not be frustrated with my husband for having different tastebuds than my own, I also tried convincing him to like it by saying…

  • Day 4: Cinnamon Bread

A few weeks ago I picked up a little magazine from the grocery aisle that sparked my interest.  The title is Fall Freezer Meals, put out by Taste of Home magazine.  We had been discussing whether or not to purchase a freezer and it was fall, so the title had me.  We still haven’t decided on a freezer, but I decided to go ahead and make some of these menus anyway.  Most of the recipes in this booklet make enough to eat one dish and freeze the other.  The same is true for this bread recipe. I usually think of pumpkin bread when I think of fall, but my husband…

  • Day 3: French Lentil Stew

We love soups and stews in our home, but 100+ degree temperatures during the summer just don’t allow for me to be in the kitchen cooking soup, let alone attempting to eat it.  I couldn’t wait for the weather to cool down so I could try out some new soup recipes that I found. Lentils are a great source of protein and are very cheap!  So, you can easily make this stew for a few dollars and feed your family with  a little bit leftover.  The original recipe did not include meat, so I just threw in some leftover Bratwurst and it added a nice touch.  My husband isn’t too…

  • 31 Days of Fall from the Kitchen, Day 2: Apple Crisp

If you’re looking for something quick to bake this afternoon or evening, this might be just the thing.  You may even have all of the ingredients on hand, so a trip to the store might not be necessary, which would make it all the better.  For some reason I always want some sort of baked good to sink my teeth into on Sunday afternoons.  I just finished my helping of this dessert and it hit the spot! Apple desserts are some of my favorites.  In fact, when I was growing up my mom would often make apple pie for my birthday instead of cake.  You might see an apple pie…

  • Baked Potato Casserole

I apologize for my absence the past few days.  The girls and I have been at my parents’ house and I’ve barely opened the computer the whole time we’ve been here!  It has been nice to relax and spend time with my family.  On Saturday I ran in the 10 mile race that I mentioned in my post Run Mama Run, and I’m thankful to say that I finished the race.  I’ll share more on the race later, but let me just say that my body hasn’t been this sore since I gave birth to my first child. We’re driving home today and I can’t wait to share with you…

  • Creamy Caramel Fruit Dip

Fall officially begins in just two days, so that means lots of fall recipes to come, some decorating and enjoying my favorite time of year!  I first made this dip about two years ago for my older sister’s baby shower and loved it.  It’s not your typical sticky caramel dip (although I love that kind too), so it feels a bit lighter and perhaps healthier.  You could use it for all kinds of fruit, but being traditional, I just prefer to use it for apple slices. This recipe comes from the amazing lady who catered our wedding, and I’ve never been disappointed by anything she’s made!  When I came across…

  • Chocolate Cake, Pinterest Style

*Don’t forget to enter The Blue Ladybug giveaway for the chance to win a cute wristlet!* This morning I had a facebook message from someone asking for ideas on chocolate layer cakes.  Besides the fact that it made me hungry for chocolate cake, it drove me to look around Pinterest for some ideas.  Let me tell you, there are some great looking recipes out there! • Risotto with Mushrooms and Peas

Risotto is one of my favorite ways to serve and eat rice.  The rice is cooked slowly, with chicken broth, so the end product is a creamy, flavorful side dish that is an excellent accompaniment to any meat.  We usually eat it plain, but you can also add cooked vegetables to it at the end to pack in some more flavor.  This time I simply sauteed some mushrooms, steamed some peas, and then after adding in the cheese, I stirred in the mushrooms and peas.  It was delicious! • Shrimp and Grits & A Weekend with Friends

For the past two years I’ve been blessed with the fact that my husband has gotten 4-day holiday weekends, for the most part, due to the nature of his work.  This past Labor Day weekend was no exception, so we enjoyed four wonderful days together!  To top it off, some of our very best friends cane for the weekend.  My husband has a group of friends from his college days who get together every year, typically at the beach.  This year, however, one couple in the group is living overseas, serving with the International Justice Mission. (I’d encourage you to check out the IJM website.  The work they do is…
